- 1/2 lb. noodles
- 1/4 cup vegetable oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 carrot, sliced
- 1/2 cup mushrooms, sliced
- 3 green onions, chopped
- Cook noodles according to package instructions.
- Heat oil in a large skillet over medium-high heat.
- Add onion and garlic and cook until softened.
- Add bell pepper, carrot and mushrooms and cook for 5 minutes.
- Add cooked noodles and green onions and stir-fry for 3 minutes.
- Serve hot.
