  1. Chop the onion and garlic.
  2. Cut the peppers, carrot and mushrooms into thin slices.
  3. Heat a wok or large frying pan over medium-high heat.
  4. Add the onion and garlic and stir fry for 1 minute.
  5. Add the peppers, carrot and mushrooms and stir fry for 3 minutes.
  6. Serve hot.
