Ingredients
  • 1 tablespoon vegetable oil
  • 1 red onion, sliced
  • 2 cloves garlic, minced
  • 2 cups broccoli florets
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup mushrooms, sliced

Steps
  1. Heat oil in a large skillet over medium-high heat.
  2. Add the onion and garlic and cook until softened, about 5 minutes.
  3. Add the broccoli, bell peppers and mushrooms and cook for an additional 5 minutes.
  4. Stir in desired seasonings and cook for another 3-4 minutes until vegetables are tender.
  5. Serve warm.
