- 1 tablespoon vegetable oil
- 1 red onion, sliced
- 2 cloves garlic, minced
- 2 cups broccoli florets
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup mushrooms, sliced
- Heat oil in a large skillet over medium-high heat.
- Add the onion and garlic and cook until softened, about 5 minutes.
- Add the broccoli, bell peppers and mushrooms and cook for an additional 5 minutes.
- Stir in desired seasonings and cook for another 3-4 minutes until vegetables are tender.
- Serve warm.
