Ingredients
  • 1 package extra-firm tofu
  • 1 red bell pepper, cut into thin strips
  • 1 cup snow peas, trimmed
  • 1/2 cup sliced mushrooms
  • 2 cloves garlic, minced
  • 2 tablespoons vegetable oil
  • 2 tablespoons soy sauce

Steps
  1. Drain the tofu and pat dry with paper towels. Cut into cubes.
  2. Heat the oil in a large skillet over medium-high heat.
  3. Add the tofu cubes and cook for about 5 minutes, stirring occasionally until lightly browned.
  4. Add the bell pepper, snow peas, mushrooms and garlic. Cook for another 5 minutes or until vegetables are tender.
  5. Stir in the soy sauce and cook for an additional minute.
  6. Serve hot.
