Stew
Ingredients
  • 2 tablespoons olive oil
  • 2 onions, diced
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 cups beef broth or stock
  • 2 cups water
  • 3 carrots, peeled and diced

Steps
  1. Heat the olive oil in a large pot over medium heat. Add the onions and cook until softened, about 5 minutes.
  2. Add the garlic, oregano, paprika, cumin, salt and pepper. Cook for an additional minute.
  3. Add the beef broth and water and bring to a boil. Reduce the heat to low and simmer for 10 minutes.
  4. Add the carrots to the pot and simmer for an additional 15 minutes.
  5. Serve hot.
