- 2 tablespoons olive oil
- 2 onions, diced
- 4 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon paprika
- 1 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 2 cups beef broth or stock
- 2 cups water
- 3 carrots, peeled and diced
- Heat the olive oil in a large pot over medium heat. Add the onions and cook until softened, about 5 minutes.
- Add the garlic, oregano, paprika, cumin, salt and pepper. Cook for an additional minute.
- Add the beef broth and water and bring to a boil. Reduce the heat to low and simmer for 10 minutes.
- Add the carrots to the pot and simmer for an additional 15 minutes.
- Serve hot.
