Ingredients
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon ground black pepper
  • 4 cups vegetable broth
  • 2 cups diced potatoes
  • 2 cups diced carrots
  • 2 cups fresh green beans, trimmed and cut into 1-inch pieces

Steps
  1. Heat the oil in a large pot over medium heat.
  2. Add the onion and garlic and cook until the onion is soft, about 5 minutes.
  3. Stir in the oregano, thyme and black pepper.
  4. Pour in the vegetable broth and bring to a boil.
  5. Add the potatoes, carrots and green beans to the pot. Reduce heat to low and simmer for 15 minutes.
  6. Serve hot.
