- 2 cups of split peas
- 2 tablespoons of olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- 3 carrots, diced
- 2 celery stalks, diced
- 4 cups vegetable broth
- Heat the olive oil in a large pot over medium heat.
- Add the onion and cook until softened.
- Stir in the garlic and thyme.
- Add the carrots and celery and cook for 2 minutes.
- Pour in the split peas and vegetable broth. Bring to a boil then reduce heat to low.
- Simmer for about 30 minutes until peas are tender.
- Season with salt and pepper to taste.
