Split Pea Soup
Ingredients
  • 2 cups of split peas
  • 2 tablespoons of olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 3 carrots, diced
  • 2 celery stalks, diced
  • 4 cups vegetable broth

Steps
  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion and cook until softened.
  3. Stir in the garlic and thyme.
  4. Add the carrots and celery and cook for 2 minutes.
  5. Pour in the split peas and vegetable broth. Bring to a boil then reduce heat to low.
  6. Simmer for about 30 minutes until peas are tender.
  7. Season with salt and pepper to taste.
