Spinach and Bacon…
Ingredients
  • 5 slices bacon
  • 1/2 cup olive oil
  • 2 tablespoons white wine vinegar
  • 1 teaspoon sugar
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 6 cups fresh spinach leaves, rinsed and dried

Steps
  1. In a large skillet over medium heat, cook bacon until crispy. Remove from skillet and drain on paper towels. Reserve 2 tablespoons of bacon grease.
  2. In a small bowl, whisk together the olive oil, white wine vinegar, sugar, salt and pepper. Set aside.
  3. In a large bowl, combine the spinach leaves with the reserved bacon grease. Toss to coat.
  4. Add the dressing to the spinach and toss to combine. Top with crumbled bacon.
  5. Serve immediately.
