- 5 slices bacon
- 1/2 cup olive oil
- 2 tablespoons white wine vinegar
- 1 teaspoon sugar
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper
- 6 cups fresh spinach leaves, rinsed and dried
- In a large skillet over medium heat, cook bacon until crispy. Remove from skillet and drain on paper towels. Reserve 2 tablespoons of bacon grease.
- In a small bowl, whisk together the olive oil, white wine vinegar, sugar, salt and pepper. Set aside.
- In a large bowl, combine the spinach leaves with the reserved bacon grease. Toss to coat.
- Add the dressing to the spinach and toss to combine. Top with crumbled bacon.
- Serve immediately.
