Spinach Pesto
Ingredients
  • 2 cups fresh spinach leaves
  • 1/2 cup toasted pine nuts
  • 3 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/2 cup olive oil
  • 1/4 cup freshly grated Parmesan cheese

Steps
  1. Combine the spinach, pine nuts, garlic, and salt in a food processor.
  2. Process until the mixture is finely minced.
  3. With the motor running, slowly pour in the olive oil.
  4. Process until smooth.
  5. Stir in the Parmesan cheese.
  6. Taste and adjust seasonings if necessary.
