- 3 slices bacon
- 1/2 cup chopped onion
- 1/2 teaspoon minced garlic
- 3 cups fresh spinach leaves, rinsed and drained
- 4 eggs
- 1/2 cup milk
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- Preheat oven to 350 degrees F (175 degrees C). Grease a 9-inch pie plate.
- In a large skillet over medium heat, cook bacon until crisp. Remove from pan, reserving 1 tablespoon of the fat.
- Add onion and garlic to the reserved bacon fat. Cook and stir until onion is softened, about 5 minutes. Add spinach; cook and stir until wilted.
- Whisk together eggs, milk, salt and pepper in a bowl.
- Crumble bacon into the egg mixture; stir in onion and spinach.
- Pour into prepared pie plate.
- Bake in preheated oven for 25 minutes or until golden brown.
- Allow to cool before serving.
