Spinach Bacon Qui…
Ingredients
  • 3 slices bacon
  • 1/2 cup chopped onion
  • 1/2 teaspoon minced garlic
  • 3 cups fresh spinach leaves, rinsed and drained
  • 4 eggs
  • 1/2 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper

Steps
  1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9-inch pie plate.
  2. In a large skillet over medium heat, cook bacon until crisp. Remove from pan, reserving 1 tablespoon of the fat.
  3. Add onion and garlic to the reserved bacon fat. Cook and stir until onion is softened, about 5 minutes. Add spinach; cook and stir until wilted.
  4. Whisk together eggs, milk, salt and pepper in a bowl.
  5. Crumble bacon into the egg mixture; stir in onion and spinach.
  6. Pour into prepared pie plate.
  7. Bake in preheated oven for 25 minutes or until golden brown.
  8. Allow to cool before serving.
