Ingredients
  • 1 package of extra firm tofu
  • 2 tablespoons vegetable oil
  • 1/2 cup diced onion
  • 1/2 cup diced bell pepper
  • 1 teaspoon minced garlic
  • 1 tablespoon grated ginger root
  • 3 tablespoons soy sauce
  • 3 tablespoons brown sugar
  • 1/4 teaspoon red pepper flakes

Steps
  1. Press the tofu between paper towels to remove any excess moisture. Cut the tofu into cubes and set aside.
  2. Heat the oil in a large skillet over medium heat. Add the onion, bell pepper, garlic, and ginger. Cook for 5 minutes or until vegetables are softened.
  3. Add the tofu to the skillet and cook for an additional 5 minutes.
  4. Stir in the soy sauce, brown sugar, and red pepper flakes. Cook for an additional 5 minutes or until everything is heated through.
  5. Serve hot over cooked rice.
