Spicy Spinach Dal
Ingredients
  • 2 tablespoons vegetable oil
  • 1 teaspoon cumin seeds
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground ginger
  • 1 teaspoon garam masala
  • 1/2 teaspoon ground turmeric
  • 1/4 teaspoon cayenne pepper (optional)
  • 3 cups cooked lentils or beans of choice, drained and rinsed (such as black-eyed peas, chickpeas or kidney beans)
  • 4 cups cooked spinach, chopped (or 2 10-ounce packages frozen spinach, thawed and drained)

Steps
  1. Heat oil in a large pot over medium heat. Add cumin seeds and cook for 1 minute until fragrant.
  2. Add onion and garlic and cook for 3 minutes until softened.
  3. Add ginger, garam masala, turmeric and cayenne pepper (if using). Cook for 1 minute.
  4. Add lentils or beans of choice and mix to combine.
  5. Stir in spinach and cook for 5 minutes until heated through.
  6. Serve warm with your favorite accompaniments.
