- 2 tablespoons vegetable oil
- 1 teaspoon cumin seeds
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon ground ginger
- 1 teaspoon garam masala
- 1/2 teaspoon ground turmeric
- 1/4 teaspoon cayenne pepper (optional)
- 3 cups cooked lentils or beans of choice, drained and rinsed (such as black-eyed peas, chickpeas or kidney beans)
- 4 cups cooked spinach, chopped (or 2 10-ounce packages frozen spinach, thawed and drained)
- Heat oil in a large pot over medium heat. Add cumin seeds and cook for 1 minute until fragrant.
- Add onion and garlic and cook for 3 minutes until softened.
- Add ginger, garam masala, turmeric and cayenne pepper (if using). Cook for 1 minute.
- Add lentils or beans of choice and mix to combine.
- Stir in spinach and cook for 5 minutes until heated through.
- Serve warm with your favorite accompaniments.
