- 1/2 pound cooked shrimp, chopped
- 1/4 cup diced onion
- 1/4 cup diced red bell pepper
- 1 jalapeno, seeded and diced
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- Salt and pepper to taste
- 4 large flour tortillas
- 3/4 cup shredded Mexican cheese blend
- Heat oil in a large skillet over medium heat. Add onion, bell pepper, and jalapeno. Cook until vegetables are softened, about 5 minutes.
- Add garlic and cook until fragrant, about 1 minute more.
- Stir in shrimp, chili powder, cumin, salt and pepper. Cook until heated through.
- Lay out two of the tortillas on a work surface. Divide the shrimp mixture between the two tortillas and top with cheese.
- Top with remaining two tortillas. Heat a large skillet over medium heat. Place one quesadilla in the pan and cook until golden brown on both sides.
- Repeat with remaining quesadilla.
