Ingredients
  • 1/2 pound cooked shrimp, chopped
  • 1/4 cup diced onion
  • 1/4 cup diced red bell pepper
  • 1 jalapeno, seeded and diced
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • 4 large flour tortillas
  • 3/4 cup shredded Mexican cheese blend

Steps
  1. Heat oil in a large skillet over medium heat. Add onion, bell pepper, and jalapeno. Cook until vegetables are softened, about 5 minutes.
  2. Add garlic and cook until fragrant, about 1 minute more.
  3. Stir in shrimp, chili powder, cumin, salt and pepper. Cook until heated through.
  4. Lay out two of the tortillas on a work surface. Divide the shrimp mixture between the two tortillas and top with cheese.
  5. Top with remaining two tortillas. Heat a large skillet over medium heat. Place one quesadilla in the pan and cook until golden brown on both sides.
  6. Repeat with remaining quesadilla.
