Spicy Miso Ramen
Ingredients
  • 1 tablespoon vegetable oil
  • 1/2 onion, diced
  • 2 cloves garlic, minced
  • 3 tablespoons white miso paste
  • 1 teaspoon chili paste (such as sambal oelek)
  • 4 cups vegetable broth
  • 3 ounces ramen noodles (or 2 packages instant ramen noodles)
  • 2 tablespoons soy sauce
  • 2 tablespoons mirin

Steps
  1. Heat the oil in a large pot over medium heat. Add the onion and garlic and cook until softened, about 5 minutes. Stir in the miso paste and chili paste and cook for 1 minute.
  2. Add the broth, noodles, soy sauce and mirin. Bring to a boil then reduce heat to low and simmer for 5 minutes.
  3. Ladle into bowls and serve hot.
