Spicy Lasagna Soup
Ingredients
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Pinch of crushed red pepper flakes
  • 1 (28-ounce) can crushed tomatoes
  • 2 cups vegetable broth
  • 2 cups water
  • 2 tablespoons tomato paste
  • 3/4 cup uncooked lasagna noodles, broken into small pieces

Steps
  1. Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until the onion is softened, about 5 minutes. Stir in the oregano and red pepper flakes and cook for 1 minute.
  2. Add the crushed tomatoes, vegetable broth, water, and tomato paste. Bring to a boil over high heat.
  3. Reduce the heat to low and add the lasagna noodles. Simmer until the noodles are tender, about 10 minutes.
  4. Serve hot.
