Ingredients
  • 1 red pepper, cut into thin strips
  • 1 yellow pepper, cut into thin strips
  • 1 orange pepper, cut into thin strips
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 4 large flour tortillas
  • 1/4 cup salsa verde
  • 4 ounces shredded Monterey Jack cheese

Steps
  1. Heat a grill pan over medium-high heat. Add the peppers and cook for 5 minutes, stirring occasionally. Drizzle with the olive oil and season with the chili powder and garlic powder. Cook for another 5 minutes, stirring occasionally.
  2. Lay out two of the tortillas on a work surface. Spread each with 2 tablespoons of salsa verde and top with half of the cheese and half of the grilled peppers. Top each with one of the remaining tortillas.
  3. Heat a large non-stick skillet over medium heat. Place one of the quesadillas in the skillet and cook for 3 minutes per side or until golden brown and crispy.
  4. Repeat with remaining quesadilla.
  5. Cut each quesadilla into 4 wedges and serve hot.
