- 4 large baking potatoes
- 1/4 cup olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon chili powder
- 1/2 teaspoon cumin
- Kosher salt and freshly ground black pepper, to taste
- Preheat oven to 400 degrees F. Line a baking sheet with parchment paper.
- Pierce potatoes several times with a fork and place onto prepared baking sheet.
- Brush potatoes with olive oil and season with garlic powder, onion powder, smoked paprika, chili powder, cumin, salt and pepper.
- Bake for 45-50 minutes or until tender.
- Let cool slightly before cutting in half lengthwise.
- Scoop out the flesh of the potatoes leaving about 1/4 inch of potato in the skin. Discard the flesh or save for another use.
- Brush the insides of the skins with olive oil and season with salt and pepper.
- Place onto prepared baking sheet and bake for an additional 15-20 minutes or until golden brown and crisp. Serve immediately.
