Spicy Baked Potat…
Ingredients
  • 4 large baking potatoes
  • 1/4 cup olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Kosher salt and freshly ground black pepper, to taste

Steps
  1. Preheat oven to 400 degrees F. Line a baking sheet with parchment paper.
  2. Pierce potatoes several times with a fork and place onto prepared baking sheet.
  3. Brush potatoes with olive oil and season with garlic powder, onion powder, smoked paprika, chili powder, cumin, salt and pepper.
  4. Bake for 45-50 minutes or until tender.
  5. Let cool slightly before cutting in half lengthwise.
  6. Scoop out the flesh of the potatoes leaving about 1/4 inch of potato in the skin. Discard the flesh or save for another use.
  7. Brush the insides of the skins with olive oil and season with salt and pepper.
  8. Place onto prepared baking sheet and bake for an additional 15-20 minutes or until golden brown and crisp. Serve immediately.
