Spanish Rice
Ingredients
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 (14.5 ounce) can diced tomatoes with green chilies

Steps
  1. Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
  2. Stir in the rice and cook for 1 minute.
  3. Pour in the chicken broth and diced tomatoes with green chilies. Bring to a boil, reduce heat to low, cover and simmer for 20 minutes.
  4. Remove from heat and let stand for 5 minutes before serving.
