Ingredients
  • 4 boneless chicken thighs
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper
  • salt and freshly ground black pepper to taste
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1/2 onion, diced
  • 6 ounces chorizo sausage, diced
  • 2 potatoes, cubed

Steps
  1. Preheat oven to 350°F (175°C). Place chicken thighs on a baking sheet lined with parchment paper. Sprinkle with smoked paprika, cayenne pepper, salt and black pepper. Bake in preheated oven for 25 minutes.
  2. Heat olive oil in a large skillet over medium heat. Add garlic and onion; cook and stir until onion is translucent. Add chorizo sausage; cook and stir until lightly browned. Add potatoes; cook and stir until potatoes are tender.
  3. Add chicken thighs to the skillet; cook and stir until heated through. Serve hot.
