Ingredients
  • 1 head romaine lettuce, chopped
  • 1/2 cup black beans, cooked
  • 1/2 cup corn, cooked
  • 1/2 cup cherry tomatoes, halved
  • 1/2 red onion, diced
  • 1 avocado, diced
  • 2 tablespoons olive oil
  • 2 tablespoons lime juice
  • Salt and pepper to taste

Steps
  1. In a large bowl combine the chopped lettuce, black beans, corn, tomatoes and red onion.
  2. In a small bowl whisk together olive oil, lime juice and salt and pepper.
  3. Pour the dressing over the salad and toss to combine.
  4. Top with diced avocado.
  5. Serve immediately.
