- 1 head romaine lettuce, chopped
- 1/2 cup black beans, cooked
- 1/2 cup corn, cooked
- 1/2 cup cherry tomatoes, halved
- 1/2 red onion, diced
- 1 avocado, diced
- 2 tablespoons olive oil
- 2 tablespoons lime juice
- Salt and pepper to taste
- In a large bowl combine the chopped lettuce, black beans, corn, tomatoes and red onion.
- In a small bowl whisk together olive oil, lime juice and salt and pepper.
- Pour the dressing over the salad and toss to combine.
- Top with diced avocado.
- Serve immediately.
