Southwest Egg Bake
Ingredients
  • 1/2 cup diced onion
  • 1/2 cup diced bell pepper
  • 1/2 cup diced jalapeno pepper
  • 6 eggs
  • 1/4 cup heavy cream
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1/2 cup shredded cheddar cheese

Steps
  1. Preheat oven to 375°F.
  2. In a large skillet, heat the olive oil over medium-high heat.
  3. Add the onion, bell pepper, and jalapeno pepper and cook until softened, about 5 minutes.
  4. In a medium bowl, whisk together the eggs, cream, salt, and pepper.
  5. Add the egg mixture to the skillet and cook until almost set, stirring occasionally.
  6. Sprinkle with cheese and transfer to a greased 9-inch pie plate.
  7. Bake for 25 minutes or until golden brown and set in the center.
  8. Let cool for 10 minutes before serving.
