Ingredients
  • 4 large potatoes
  • 2 eggs, hard-boiled and diced
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 2 tablespoons Dijon mustard
  • 1/4 cup chopped celery
  • 1/4 cup chopped red onion
  • 2 tablespoons chopped fresh parsley leaves
  • salt and freshly ground black pepper to taste

Steps
  1. Peel potatoes and cut into small cubes. Place in a pot of boiling salted water. Cook for 10 minutes or until tender. Drain, rinse with cold water and set aside to cool.
  2. In a large bowl, combine the potatoes, eggs, mayonnaise, sour cream, mustard, celery, red onion and parsley. Mix until all ingredients are combined.
  3. Season with salt and pepper to taste.
  4. Refrigerate for at least 1 hour before serving.
