- 2 large sweet potatoes
- 1/2 cup butter
- 1/2 cup white sugar
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 2 eggs, beaten
- 1 (9 inch) unbaked pie crust
- Preheat oven to 350 degrees F (175 degrees C). Bake sweet potatoes for 1 hour. Cool and peel.
- In a large bowl, mash the sweet potatoes with butter. Stir in sugar, cinnamon, nutmeg, salt and eggs. Pour into unbaked pie crust.
- Bake at 350 degrees F (175 degrees C) for 40 to 50 minutes or until set. Cool before serving.
