- 1 cup cornmeal
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup buttermilk
- 3 tablespoons melted butter or bacon grease
- Preheat oven to 425°F. Grease an 8-inch cast iron skillet with butter or bacon grease.
- In a large bowl, whisk together the cornmeal, baking powder, baking soda and salt.
- Stir in the buttermilk and melted butter until combined.
- Pour the batter into the prepared skillet and bake for 18-20 minutes, or until golden brown.
- Serve warm.
