Ingredients
  • 1 cup cornmeal
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 3 tablespoons melted butter or bacon grease

Steps
  1. Preheat oven to 425°F. Grease an 8-inch cast iron skillet with butter or bacon grease.
  2. In a large bowl, whisk together the cornmeal, baking powder, baking soda and salt.
  3. Stir in the buttermilk and melted butter until combined.
  4. Pour the batter into the prepared skillet and bake for 18-20 minutes, or until golden brown.
  5. Serve warm.
