- 2 lbs. catfish fillets
- 1 cup yellow cornmeal
- 3 tablespoons all-purpose flour
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/4 teaspoon cayenne pepper
- Salt and pepper, to taste
- Vegetable oil, for frying
- Cut the catfish fillets into 3-inch strips.
- In a shallow dish, combine the cornmeal, flour, garlic powder, onion powder, cayenne pepper, salt and pepper.
- Dredge the catfish in the cornmeal mixture and set aside.
- Heat 1/2 inch of oil in a large skillet over medium-high heat until it reaches 350 degrees F.
- Fry the catfish strips in batches for 4 minutes on each side or until golden brown.
- Remove from the skillet and drain on paper towels.
- Serve hot with tartar sauce.
