Ingredients
  • 4 cups crumbled cornbread
  • 1/2 cup chopped celery
  • 1/2 cup chopped onion
  • 1/4 cup butter or margarine
  • 3 tablespoons minced fresh parsley
  • 1 teaspoon poultry seasoning
  • 1/2 teaspoon salt, optional
  • 1/4 teaspoon pepper
  • 2 cups chicken broth

Steps
  1. In a large skillet, sauté celery and onion in butter until tender.
  2. Add the parsley, poultry seasoning, salt if desired and pepper.
  3. Stir in the crumbled cornbread and chicken broth.
  4. Mix well. Spoon into a greased 2-quart baking dish.
  5. Bake uncovered at 350° for 25-30 minutes or until heated through.
  6. Serve with gravy if desired.
