- 1 cup yellow cornmeal
- 1/2 cup all-purpose flour
- 1/4 cup white sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 egg, beaten
- 1 cup buttermilk
- 4 tablespoons vegetable oil
- Preheat oven to 400 degrees F (200 degrees C).
- Mix together the cornmeal, flour, sugar, baking powder, baking soda and salt in a large bowl.
- In a separate bowl, mix together the egg, buttermilk and oil.
- Stir the wet ingredients into the dry ingredients until just blended.
- Pour batter into a greased 8 inch square pan.
- Bake in preheated oven for 20 to 25 minutes.
- Cornbread is done when golden brown on top and a toothpick inserted into center comes out clean.
