Southern Cornbread
Ingredients
  • 1 cup yellow cornmeal
  • 1/2 cup all-purpose flour
  • 1/4 cup white sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 egg, beaten
  • 1 cup buttermilk
  • 4 tablespoons vegetable oil

Steps
  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Mix together the cornmeal, flour, sugar, baking powder, baking soda and salt in a large bowl.
  3. In a separate bowl, mix together the egg, buttermilk and oil.
  4. Stir the wet ingredients into the dry ingredients until just blended.
  5. Pour batter into a greased 8 inch square pan.
  6. Bake in preheated oven for 20 to 25 minutes.
  7. Cornbread is done when golden brown on top and a toothpick inserted into center comes out clean.
