Sourdough Focaccia
Ingredients
  • 2 cups sourdough starter
  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 3 tablespoons olive oil
  • 1/4 cup fresh rosemary leaves, finely chopped
  • 2 tablespoons coarse sea salt, for topping

Steps
  1. Mix the starter and flour together in a large bowl.
  2. Add the salt and stir until combined.
  3. Add 1 tablespoon of the olive oil and mix until a soft dough forms.
  4. Turn out onto a lightly floured surface and knead for 5 minutes.
  5. Shape the dough into a ball and place in an oiled bowl. Cover with plastic wrap and let rise for 1 hour.
  6. Preheat oven to 375°F (190°C).
  7. Roll out the dough into a 12-inch (30 cm) round on a lightly floured surface.
  8. Transfer to an oiled baking sheet or pizza stone.
  9. Brush with remaining olive oil, sprinkle with rosemary and sea salt.
  10. Bake for 25 minutes or until golden brown.
