- 3 cups (750 ml) sourdough starter
- 1/2 cup (125 ml) warm water
- 2 teaspoons (10 ml) salt
- 2 tablespoons (30 ml) sugar
- 4 1/2 cups (1125 ml) all-purpose flour
- In a large bowl, combine the sourdough starter, warm water, salt and sugar. Mix until combined.
- Add the flour and mix until a dough forms. Knead for 5 minutes until the dough is smooth and elastic.
- Divide the dough into 8 equal pieces and form each into a ball. Flatten each ball slightly and poke a hole in the center with your finger.
- Place the bagels on a baking sheet lined with parchment paper. Cover with a damp cloth and let rise for 30 minutes.
- Preheat oven to 400°F (200°C). Boil a pot of water and add 1 tablespoon of sugar.
- Carefully drop each bagel into the boiling water for about 30 seconds. Remove with a slotted spoon and place back on the baking sheet.
- Bake for 25 minutes or until golden brown. Let cool before serving.
