- 2 pounds boneless, skinless chicken breasts
- 1 can (10 ounces) diced tomatoes and green chiles, undrained
- 1 can (15 ounces) black beans, rinsed and drained
- 1 can (11 ounces) corn kernels, drained
- 1 package taco seasoning mix
- Place chicken in a slow cooker. Top with tomatoes, beans, corn and taco seasoning.
- Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours.
- Shred the chicken with two forks.
- Serve in taco shells or over rice.
- Top with shredded cheese and lettuce, if desired.
