Slow Cooker Chickā€¦
Ingredients
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 4 carrots, peeled and chopped
  • 4 celery stalks, chopped
  • 2 boneless skinless chicken breasts
  • 6 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Steps
  1. Heat the olive oil in a skillet over medium heat. Add the onion and garlic; cook and stir until the onion is translucent, about 5 minutes.
  2. Add the carrots and celery; cook and stir until softened, about 5 minutes more.
  3. Place the chicken breasts in a slow cooker. Pour in the broth.
  4. Stir in the thyme, oregano, salt, and pepper.
  5. Cover and cook on Low for 6 to 8 hours.
  6. Remove the chicken from the slow cooker. Shred with two forks; return to slow cooker.
  7. Cook until noodles are tender, about 15 minutes more. Serve hot.
