- 2 tablespoons olive oil
- 1 onion, chopped
- 4 cloves garlic, minced
- 4 carrots, peeled and chopped
- 4 celery stalks, chopped
- 2 boneless skinless chicken breasts
- 6 cups chicken broth
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Heat the olive oil in a skillet over medium heat. Add the onion and garlic; cook and stir until the onion is translucent, about 5 minutes.
- Add the carrots and celery; cook and stir until softened, about 5 minutes more.
- Place the chicken breasts in a slow cooker. Pour in the broth.
- Stir in the thyme, oregano, salt, and pepper.
- Cover and cook on Low for 6 to 8 hours.
- Remove the chicken from the slow cooker. Shred with two forks; return to slow cooker.
- Cook until noodles are tender, about 15 minutes more. Serve hot.
