Slow Cooker Chickā€¦
Ingredients
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 bell peppers, diced
  • 1 jalapeno pepper, seeded and diced (optional)
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 (14.5 ounce) cans black beans, drained and rinsed
  • 2 (14.5 ounce) cans diced tomatoes with juice
  • 3 cups cooked chicken, shredded or cubed

Steps
  1. Heat oil in a large skillet over medium heat.
  2. Add onion and garlic and cook until softened.
  3. Add bell peppers and jalapeno pepper and cook for an additional 5 minutes.
  4. Stir in chili powder, cumin, oregano, salt and pepper.
  5. Add beans, tomatoes with juice and chicken to slow cooker.
  6. Stir to combine.
  7. Cover and cook on low for 6-8 hours or high for 3-4 hours.
