- 2 tablespoons olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 bell peppers, diced
- 1 jalapeno pepper, seeded and diced (optional)
- 2 tablespoons chili powder
- 1 tablespoon ground cumin
- 1 teaspoon oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 (14.5 ounce) cans black beans, drained and rinsed
- 2 (14.5 ounce) cans diced tomatoes with juice
- 3 cups cooked chicken, shredded or cubed
- Heat oil in a large skillet over medium heat.
- Add onion and garlic and cook until softened.
- Add bell peppers and jalapeno pepper and cook for an additional 5 minutes.
- Stir in chili powder, cumin, oregano, salt and pepper.
- Add beans, tomatoes with juice and chicken to slow cooker.
- Stir to combine.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
