Slow Cooker Chickā€¦
Ingredients
  • 2 tablespoons vegetable oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 1/2 pounds boneless, skinless chicken thighs, cut into bite-sized pieces
  • 2 carrots, diced
  • 1 celery stalk, diced
  • 3 cups chicken broth or stock
  • 1 cup uncooked long grain white rice
  • 1 teaspoon dried thyme leaves
  • 1 teaspoon dried oregano leaves

Steps
  1. Heat oil in a large skillet over medium heat. Add onion and garlic; cook until softened.
  2. Add chicken and cook until lightly browned.
  3. Transfer to slow cooker.
  4. Add carrots, celery, broth, rice and herbs to slow cooker; stir to combine.
  5. Cover and cook on low for 6-7 hours or on high for 3-4 hours.
  6. Stir before serving.
