- 1.5 lbs stew beef
- 2 tablespoons olive oil
- 1 large onion, diced
- 3 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 teaspoon paprika
- ½ teaspoon dried thyme leaves
- ¼ teaspoon ground nutmeg
- 1 cup beef broth
- 8 ounces sliced mushrooms
- ½ cup sour cream
- Heat the oil in a large skillet over medium heat. Add the beef and cook for about 5 minutes, stirring occasionally.
- Add the onions and garlic and cook for an additional 5 minutes until the onions are softened.
- Stir in the tomato paste, paprika, thyme, and nutmeg and cook for another minute.
- Transfer the mixture to a slow cooker.
- Add the beef broth and mushrooms to the slow cooker and stir to combine.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Stir in the sour cream just before serving.
