Slow Cooker Beef …
Ingredients
  • 1.5 lbs stew beef
  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon paprika
  • ½ teaspoon dried thyme leaves
  • ¼ teaspoon ground nutmeg
  • 1 cup beef broth
  • 8 ounces sliced mushrooms
  • ½ cup sour cream

Steps
  1. Heat the oil in a large skillet over medium heat. Add the beef and cook for about 5 minutes, stirring occasionally.
  2. Add the onions and garlic and cook for an additional 5 minutes until the onions are softened.
  3. Stir in the tomato paste, paprika, thyme, and nutmeg and cook for another minute.
  4. Transfer the mixture to a slow cooker.
  5. Add the beef broth and mushrooms to the slow cooker and stir to combine.
  6. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  7. Stir in the sour cream just before serving.
