Shrimp Quesadillas
Ingredients
  • 2 tablespoons olive oil
  • 1/2 onion, diced
  • 1/2 red bell pepper, diced
  • 1/2 green bell pepper, diced
  • 1 clove garlic, minced
  • 1/4 teaspoon cumin
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon paprika
  • Salt and pepper to taste
  • 3 cups cooked shrimp, chopped into bite-sized pieces
  • 8 flour tortillas (6-inch size)
  • 3 cups shredded cheese

Steps
  1. Heat the olive oil in a large skillet over medium heat. Add the onions, bell peppers and garlic and cook until softened, about 5 minutes. Add the cumin, chili powder, paprika and salt and pepper. Cook for 1 minute more.
  2. Add the shrimp and cook until heated through. Remove from heat.
  3. Lay 4 tortillas on a work surface. Divide the shrimp mixture among them. Sprinkle each with 1/2 cup of cheese then top with another tortilla.
  4. Heat a large skillet over medium heat. Place one quesadilla in the skillet and cook until golden brown on both sides, about 2 minutes per side.
  5. Repeat with remaining quesadillas.
  6. Serve hot.
