Ingredients
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons fresh ginger, grated
  • 2 tablespoons curry powder
  • 1 teaspoon cumin
  • 1 teaspoon turmeric
  • 1/2 teaspoon ground coriander
  • Pinch of cayenne pepper
  • 3 cups vegetable broth or chicken broth (or water)
  • 1 can (14 oz) light coconut milk
  • 2 tablespoons fish sauce (or soy sauce)
  • 2 tablespoons lime juice (or lemon juice)
  • 1 lb shrimp, peeled and deveined

Steps
  1. Heat the oil in a large pot over medium heat. Add the onion and sauté for 3-4 minutes until it starts to soften.
  2. Add the garlic and ginger and cook for an additional minute.
  3. Stir in the curry powder, cumin, turmeric, coriander and cayenne pepper. Cook for 1 minute until fragrant.
  4. Add the broth (or water), coconut milk, fish sauce (or soy sauce) and lime juice (or lemon juice). Bring to a boil.
  5. Reduce heat to low and simmer for 10 minutes.
  6. Add the shrimp and cook for 3-5 minutes until they are cooked through.
  7. Serve hot with your favorite toppings.
