- 1 lb. shrimp, peeled and deveined
- 1/4 cup olive oil
- 1/4 cup lime juice
- 2 cloves garlic, minced
- 1 tsp. chili powder
- 1/2 tsp. cumin
- Salt and pepper to taste
- 8 burrito-sized flour tortillas
- 2 cups cooked white rice
- In a medium bowl, combine the shrimp, olive oil, lime juice, garlic, chili powder, cumin and salt and pepper. Mix until the shrimp is evenly coated.
- Heat a large skillet over medium heat. Add the shrimp mixture to the skillet and cook for 4-5 minutes until the shrimp are cooked through.
- Warm the tortillas in a large skillet over medium heat for 1-2 minutes on each side.
- To assemble each burrito: Place 1/4 cup of cooked rice on each tortilla followed by 1/4 of the cooked shrimp mixture.
- Fold in each side of the tortilla and then roll up from bottom to top.
- Serve warm with desired toppings.
