Shrimp Burritos
Ingredients
  • 1 lb. shrimp, peeled and deveined
  • 1/4 cup olive oil
  • 1/4 cup lime juice
  • 2 cloves garlic, minced
  • 1 tsp. chili powder
  • 1/2 tsp. cumin
  • Salt and pepper to taste
  • 8 burrito-sized flour tortillas
  • 2 cups cooked white rice

Steps
  1. In a medium bowl, combine the shrimp, olive oil, lime juice, garlic, chili powder, cumin and salt and pepper. Mix until the shrimp is evenly coated.
  2. Heat a large skillet over medium heat. Add the shrimp mixture to the skillet and cook for 4-5 minutes until the shrimp are cooked through.
  3. Warm the tortillas in a large skillet over medium heat for 1-2 minutes on each side.
  4. To assemble each burrito: Place 1/4 cup of cooked rice on each tortilla followed by 1/4 of the cooked shrimp mixture.
  5. Fold in each side of the tortilla and then roll up from bottom to top.
  6. Serve warm with desired toppings.
