- 1/4 cup olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 teaspoon dried thyme leaves
- 1 teaspoon dried oregano leaves
- 1/2 teaspoon paprika
- 1/4 teaspoon ground black pepper
- 3 tablespoons all-purpose flour
- 3 cups vegetable broth
- 2 potatoes, peeled and cubed
- 1 (14.5 ounce) can diced tomatoes with juice
- 1 pound shellfish of your choice (shrimp, mussels, clams etc.)
- Heat the olive oil in a large pot over medium heat. Add the onion, garlic, carrots and celery and sauté for 5 minutes.
- Add the thyme, oregano, paprika and black pepper and sauté for another minute.
- Sprinkle the flour over the vegetables and stir to coat.
- Slowly pour in the vegetable broth while stirring continuously.
- Bring to a boil then reduce heat to low and simmer for 15 minutes.
- Add the potatoes and tomatoes with their juice. Simmer for an additional 10 minutes.
- Add the shellfish of your choice to the stew. Simmer for 5 more minutes or until shellfish is cooked through.
- Serve hot.
