Seafood Stew
Ingredients
  • 1/4 cup olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 teaspoon dried thyme leaves
  • 1 teaspoon dried oregano leaves
  • 1/2 teaspoon paprika
  • 1/4 teaspoon ground black pepper
  • 3 tablespoons all-purpose flour
  • 3 cups vegetable broth
  • 2 potatoes, peeled and cubed
  • 1 (14.5 ounce) can diced tomatoes with juice
  • 1 pound shellfish of your choice (shrimp, mussels, clams etc.)

Steps
  1. Heat the olive oil in a large pot over medium heat. Add the onion, garlic, carrots and celery and sauté for 5 minutes.
  2. Add the thyme, oregano, paprika and black pepper and sauté for another minute.
  3. Sprinkle the flour over the vegetables and stir to coat.
  4. Slowly pour in the vegetable broth while stirring continuously.
  5. Bring to a boil then reduce heat to low and simmer for 15 minutes.
  6. Add the potatoes and tomatoes with their juice. Simmer for an additional 10 minutes.
  7. Add the shellfish of your choice to the stew. Simmer for 5 more minutes or until shellfish is cooked through.
  8. Serve hot.
